As many of you know, I have a thing with soups. I like them. A LOT. I just find soups incredibly comforting and nourishing, and I love the HUGE variety of flavors and textures that come with them. So I have another SERIOUSLY INCREDIBLE soup recipe to share with all of you- The BEST Cauliflower Soup. “Boooooring…” is what you’re thinking. But you are wrong. Now you have to make this soup to prove me wrong. But you won’t prove me wrong. You will turn to the dark side as soon as you take your first bite! Guaranteed. 😉
This soup has incredible flavor with a smooth, slightly creamy texture, and the blend of vegetables and cheese create the perfect combination of a comforting, healthy soup. My mother-in-law is truly the mastermind behind this soup recipe. We have both made this recipe multiple times in the last 2 months and have continued to adjust it to make it perfect. So let’s just say that the recipe below is sheer perfection 😉
This Cauliflower Soup is:

This Cauliflower Soup is also VERY easy to make and can be whipped up in less than 30 minutes. The longest part, in my opinion, is chopping the cauliflower florets (which in reality only takes like 4 minutes max)!
I usually serve this soup with a fresh loaf of garlic ciabatta bread and a green salad. Pure goodness.

This Cauliflower soup has incredible flavor and a smooth, slightly creamy texture. The blend of vegetables and cheese make the perfect combination in this comforting, healthy soup!
- 1 medium head cauliflower broken into small florets
- 1 medium carrot fresh and finely shredded
- 1/4 cup celery diced
- 3 cups vegetable broth add another half cup if soup is too thick
- 4 tablespoons butter
- 4 tablespoons all-purpose flour (use gluten-free flour if you prefer)
- 3/4 teaspoon salt
- 1/8 teaspoon pepper
- 2 cups 2% milk
- 1/2 cup half and half
- 1 cup shredded cheddar cheese
- 1/2 to 1 teaspoon hot sauce optional
- 1/2 cup shredded cheddar cheese (as a topping if you'd like!)
In a large pot, combine the cauliflower, carrot, celery, and vegetable broth. Bring to a boil. Reduce heat. Then cover and simmer for 25 minutes or until vegetables are tender (do not drain).
In a large saucepan, melt the butter. Stir in the flour, salt and pepper until smooth. Gradually add the milk and then add the half and half. Bring to a boil over medium heat. Cook and stir for about 2 minutes or until it begins to thicken. Reduce heat. Stir in the cheese until it's melted and smooth. Finally, add the milk mixture to the pot of cauliflower.
At this point, feel free to swirl in a hot sauce of your choice (my husband uses Cholula). And enjoy!
