I am a dessert person but health is very important to me. So occasionally I like to put the two together. I’m not sure if a chocolate-covered banana counts as healthy or not, but it does in my book! Chocolate covered bananas are incredibly delicious, creamy, fruity, and the perfect sweet cool-down treat on a hot, summer day.
I decided to make these on a whim one afternoon and I had all the ingredients I needed, except for rainbow sprinkles and peanuts, so unfortunately I had to make a trip to the grocery store. I was also in need of popsicle sticks or cake pop sticks to skewer the bananas, but the grocery store by my house didn’t sell either one. So I got creative! I bought kabob skewers! I am not recommending them but they got the job done 🙂
How do I make them?
First, pour the chocolate chips in a mason jar or glass liquid measuring bowl and microwave them until they are melted. *Just make sure to warm-up the chocolate chips one minute at a time and stir after each minute so you don’t burn them.*
I peeled each banana and cut each in half, placed a skewer through each half banana, and put them in the freezer for about an hour. *Freezing the bananas first made the skewers stay in place so the bananas wouldn’t swing around the skewer and/or fall off when being dipped into the chocolate. It also makes the chocolate harden faster so it holds its shape better.
I chopped up the peanuts and spread them out on a large plate to make it easy to roll the banana through the peanuts, evenly. I really recommend doing the extra work of chopping up your own peanuts, instead of buying pre-chopped peanuts at the store. It really makes the peanut flavor more full and pronounced once it’s on the banana.
On another plate, or next to the peanuts on the same plate, pour out some of the rainbow sprinkles.
Roll the chocolate-covered bananas into the peanuts and sprinkles quickly, while the chocolate is still warm and soft, and give each chocolate-covered banana a nice even coat of deliciousness. 🙂
My kids were watching me make these and couldn’t stand to wait for them to go back in the freezer for an hour so I cut one up and made little bite-sized chocolate topped bananas with sprinkles. They loved them!
I may have made one for myself as well…but I added some of the chopped peanuts too… 🙂
Store the bananas in the freezer
Make sure to wrap each banana in plastic wrap after they have hardened in the freezer, if you are not planning to enjoy them that day. They will store well wrapped in plastic wrap and sealed in a Ziploc freezer bag. These Chocolate Covered Bananas are the perfect summer treat for both you and your kids!
