This Tortellini Arugula Salad is one of my favorite quick and easy recipes to make for dinner. Sometimes we have weeknight evenings that require us to make dinner more quickly than others. Do you ever have those days where you know that the time you will realistically have to make dinner will be a tiny 10 minute window? For this reason, it’s important to meal plan accordingly. I like to meal plan to where I have a couple of quick and easy dinners planned, in between more involved dinners. Planning my week this way truly helps balance out the week, and helps keep my head above water! I love this recipe and I’m sure it will quickly become one of your favorites as well!
This Tortellini Arugula Salad is filling and healthy, and SO delicious! It turns a comfort food into a fresh, wholesome dinner. And it usually goes over well with the kids too!
I just really enjoy the blend of flavors that comes from the cheese tortellini tossed with fresh basil and Italian dressing. Plus, calling a “PASTA” meal, a “SALAD” just sounds better. 😉
The best part about this meal is that it comes together, literally, in minutes. I would just add this to your “quick meal” dinner planning rotation to make life easier on yourself.

I love to make everything from scratch, but sometimes it’s okay to make a meal that has a combination of both store-bought and homemade items (tortellini being the store-bought item here in this recipe). As long as you are shooting for a healthy, well-rounded meal that incorporates as many vegetables as possible, I think you’re doing great. 🙂

Tortellini Arugula Salad
This meal is so easy to make and comes together in literally 7 minutes! It is healthy, filling and satisfies the entire family.
- 1 24 oz pkg cheese tortellini
- 1 14 oz canned artichoke hearts chopped
- 1 10 oz pkg cherry tomatoes halved
- 1/3 cup fresh basil thinly sliced
- 5 cups arugula
- 1/3 cup Italian dressing add more to taste
- Salt and Pepper to taste
Boil water in a large pot and cook tortellini according to package directions. Make sure not to overcook the tortellini. Once cooked, rinse the tortellini with cold water and set in a large bowl to cool.
Next, coarsely chop the artichoke hearts, thinly slice the basil and halve the cherry tomatoes.
Then add the artichoke hearts, basil, cherry tomatoes and arugula to the bowl of tortellini and toss the salad together.
Next, add the Italian dressing to the salad, making sure it is mixed throughout the salad. Lastly, sprinkle on a little salt and pepper to taste. And that's it! Quick, easy, and delicious!
