I have been making these Apple Coconut Breakfast Muffins (aka Morning Glory Muffins) for a couple of years now and they are delightful! My family loves eating these muffins for breakfast because they are super convenient to eat on the go or pack in a lunch, and they taste amazing. And I’m happy because I get to sneak in vegetables in the process! These muffins contain vegetables (carrots), fruit (apples and raisins) and lots of healthy fiber. They are totally a guilt-free breakfast muffin!
These breakfast muffins are:
>moist and fluffy
>slightly sweet with an apple-y cinnamon taste
>the perfect, balanced breakfast muffin!
How do I make them?
First, mix all of the dry ingredients together. Then stir in the carrots, apple, coconut, nuts, and sunflower seeds or wheat germ.
The initial mixing of all the dry ingredients is a little unnerving because everything clumps together, but as soon as you begin to mix in the wet ingredients, it all blends together smoothly. So don’t worry!
How many muffins does one recipe make?
Each batch makes at least one dozen muffins. I usually get a couple more muffins than one dozen out of this recipe, and I fill the muffin liners all the way to the top.
Make a double batch
I prefer to make a double batch of these Apple Coconut Breakfast Muffins because they go fairly quickly in my family of five. I usually freeze the second batch so I can pull them out for a week of breakfasts later in the month. They freeze really well and taste just as great thawed from the freezer as when they are first made. This is a great idea for meal planning for breakfasts..
