This recipe, BY FAR, is one of my most requested recipes. This Crockpot Vegetarian Chili is incredibly delicious with a blend of hearty black and pinto beans, fire-roasted tomatoes, and tender sweet potatoes with hints of cinnamon. I have been making this vegetarian chili for over 7 years now and it has ALWAYS been a crowd-pleaser.
And the best part is…this chili is made in a Crockpot (slow cooker)! I use this 6-Quart Crockpot because it has an awesome digital timer, it cooks perfectly, it has a no-spill guard and it is the perfect size for my family-style meals.
How to make it
This Crockpot Vegetarian Chili can be prepped in less than 15 minutes. The only ingredients that need to be chopped are the sweet potatoes and the onion. The garlic can be freshly chopped or you can use store-bought diced garlic or garlic paste (they all taste great in this chili). So simply throw all the ingredients into the Crockpot, leave it to cook for 4 hours on high or 7-8 hours on low, and come back hungry! 🙂
My Crockpot is fairly large so I often double this recipe. I like to have leftovers so I don’t have to prepare lunch the next day. 😉 This time in particular, I didn’t double the recipe and the chili went way too FAST, so I am definitely regretting that decision!
