The BEST Vegetarian Chili
This is the BEST Vegetarian Chili you will ever have and it is SO easy to make. It is incredibly delicious with a blend of hearty black and pinto beans, fire-roasted tomatoes, and tender sweet potatoes with hints of cinnamon. Throw all the ingredients in a slow cooker and come back hungry in 4 hours!

Ingredients
  • 3T olive oil
  • 2 1/2t chili powder
  • 3/4t sea salt
  • 1t cinnamon
  • 1t ground coriander
  • 1/2t cumin
  • 1/2t crushed red pepper flakes
  • 1dash cayenne pepper
  • 1 medium red oniondiced
  • 2T soy sauce
  • 3 cloves garlicminced
  • 128 oz canned fire roasted crushed tomatoes
  • 1cup water
  • 115 oz canned black beansdrained and rinsed
  • 215 oz canned pinto beansdrained and rinsed
  • 115 oz canned corndrained
  • 2medium sweet potatoescut into 1/2 inch chunks
Instructions
  1. Put all ingredients in a slow cooker and mix them together (making sure that the spices are mixed through the other ingredients).
  2. Cook on HIGH for 4 hours or on LOW for 7-8 hours.
  3. Serve hot and top with any toppings you prefer (i.e. shredded cheddar cheese, sour cream, cilantro, etc.)
