I have been making this Sweet Potato Quinoa Salad with Walnuts and Raisins A LOT lately. Like at LEAST once a week. And I’m actually eating it as I write this post 😉
This salad is healthy and filling, packed with protein, and has a delightful balance of tang and cinnamon-y sweetness. I have been making this salad for dinner as our main dish, but it would go great as a large, side salad as well.
In this salad, the red onions, arugula, and balsamic vinegar provide the spicy tang, while the cinnamon-dusted sweet potatoes and raisins provide the sweetness. This balance of flavors is absolutely PERFECT!
This is a vegetarian, protein-packed salad with walnuts and red quinoa. I like both white and red quinoa, and you can use either in this recipe, but I just prefer the look of the red quinoa. It’s pretty 😉
I am currently obsessed with this salad and could probably eat it every day. It only takes about 20 minutes to make and it is packed full of protein and nutrients!
