This Tuscan Farro White Bean Soup is definitely a tried-and-true recipe in our family. And it only takes 25 minutes to make!
My husband has never been a huge fan of soups but he LOVES this one. I think that says something about this soup! I think it must defy the normal expectations of soup (thin, broth-y, etc.) because this soup is super filling from the white beans and Farro, and it has incredible bursts of flavor from the fresh rosemary and garlic. This soup may just convert any soup-hater 😉
This particular evening, I made the soup with quinoa instead of Farro (I just didn’t have any Farro in my pantry and didn’t want to run to the store!), and it still tasted excellent. I have to say though that my husband does prefer the thickness and texture of the Farro.
This soup is very easy to make and comes together rather quickly, plus it’s super healthy which is always a bonus! I have been learning that there is incredible flavor POWER in fresh herbs. I think I already knew this, but I am trying to eat a little less dairy lately so I am relying more heavily on fresh herbs for excellent flavor in all of my dinners.
Serve this soup with a fresh loaf of garlic ciabatta bread, or another favorite bread, and you’ve got yourself a delicious dinner!
