It is still the winter season so in my book, it is still soup season! I have to say that I just LOVE soups. There is something so cozy and comforting about a warm, hearty bowl of soup. This particular Slow Cooker Detox Lentil Vegetable Soup is one of my new favorites. The blend of fresh herbs and spices with potatoes, carrots and onions bring about an aromatic soup that is just good for the soul 🙂
The name of this soup does NOT do it justice. Lentil Vegetable Soup sounds boring, but this soup is definitely not that. It has a vibrant flavor with fresh herbs, a gentle cayenne kick and a hint of garlic that makes all of the vegetables ignite your taste buds.
And the best part of this soup is that you make it in a slow cooker! I use this 6-Quart Crockpot for all of my slow cooker meals because it has an awesome, convenient digital timer, it cooks perfectly, it has a no-spill guard, and it is the perfect size for my family-style meals. So for this particular meal, you simply throw all the ingredients in your crockpot and let it cook on High for about 5-6 hours. Then come back to the perfect detox soup that is packed full of nutrients and unique flavors.

If you make this soup, try not to leave any of the ingredients out. Each ingredient impacts the flavor in a big way and completes the detoxifying fullness of this incredibly delicious soup! Adding the FRESH herbs really makes a huge difference in flavor as well. I only had dried thyme today, unfortunately, but I added fresh rosemary, and it contributed tons of flavor. That rule of thumb goes for any recipe that you make – try to always use fresh herbs and only use dried herbs in a pinch. Your recipes will be loaded with more flavor!
I also had to use arugula in this recipe today, instead of kale, so occasionally you have to just use what you’ve got! But it was still totally delicious!

Slow Cooker Detox Lentil Vegetable Soup
This hearty lentil vegetable soup has a vibrant flavor with fresh herbs, a gentle cayenne kick and a hint of garlic that makes all of the vegetables ignite your taste buds. It is packed full of nutrients and takes only 15 minutes to prepare. Just throw all of the ingredients in the crockpot, allow it to cook on High for 5-6 hours, and dinner is served!
- 2 cups carrots peeled and chopped
- 2 cups potatoes chopped into 1" cubes
- 2 cups celery chopped
- 1 cup red or green lentils
- 3/4 cup split peas or just use more lentils
- 1 onion chopped
- 5 cloves garlic minced
- 8 cups vegetable or chicken broth
- 1 teaspoon salt more to taste
- 2 teaspoons fresh rosemary minced (you may use dried rosemary)
- 2 teaspoons fresh thyme minced (you may use dried thyme)
- 1 teaspoon dried marjoram
- a dash of cayenne pepper
add at the end:
- 2 cups kale stems removed, chopped
- 1/2 cup parsley chopped
- 1/4 cup olive oil
Put all ingredients in the crockpot. Cover and cook on high for 5-6 hours or low for 7-8 hours.
Add olive oil. Stir in the kale and parsley. Turn the heat off and wait about 15 minutes before serving, to allow the flavors to soak into the vegetables and the kale to soften.
Season to taste (add the sherry, vinegar, and/or lemon juice). And enjoy!
Feel free to top with some shaved Parmesan cheese and serve with some delicious garlic ciabatta bread!
