I LOVE Udon noodles. I don’t know what it is about them. Maybe it’s their fat, juicy texture or their ability to soak up the delicious sauces they are mixed with. Whatever the case, Udon noodles are so yummy! I had a craving the other night for vegetables and Udon noodles so naturally vegetable stir-fry with Udon noodles was placed on the menu for dinner. First I chopped up some Bok Choy, peppers, and green onions.
Next, I cooked the Udon noodles and then placed them in a wok with some heated toasted sesame oil.
Next, I added the vegetables and sauteed them with the noodles for about 7 minutes.
I then pushed the stir fry to the outer edges of the wok and poured the stir fry sauce into the middle of the pan.
After allowing the sauce to bubble slightly (about 1 minute), I mixed the sauce throughout the stir fry.
And then it was done and ready to eat! A stir fry is one of the quickest and easiest meals to make. And diverse. You can add almost any noodle, vegetable and protein together to make a stir fry. Then just add your favorite sauce (stir fry sauce, teriyaki sauce, etc.). The sauce can be homemade or store-bought. No judgement here!
Udon Noodle Stir-Fry
This stir fry is SO easy and versatile. You can substitute almost any vegetable that you like to mix into the udon noodles. You can also choose any stir-fry sauce that you like. This recipe takes about 15 minutes to make and it's ready to serve nice and hot!
- 1 pkg udon noodles
- 2 baby bok choys chopped
- 3 green onions sliced
- 5 mini sweet peppers sliced
- 12 oz stir fry sauce
- 1 T olive oil
Cook the Udon noodles in a pot of boiling salted water for 1 minute. Drain the noodles. Add oil to the Wok and stir-fry the noodles over high heat until heated through. Season with salt and pepper.
Add the vegetables to the Wok and stir-fry for another 5-6 minutes until the vegetable are cooked and slightly soft.
Add the stir-fry sauce to the center of the Wok and let it cook for about 30 seconds. Mix the sauce throughout the noodles and vegetables. Then serve hot!
